Ingredients for one person:
- 2 eggs, one for patty and one to fry
- 1/2 cup mashed potatoes
- 1/4 cup bacon bits or chopped farmer sausage
- 1/4 cup of grated cheese
- 2 cloves garlic, finely chopped or chopped onion
- Olive oil
- Pepper to taste
- Chopped chives for garnish
Preparation:
- Combine mashed potatoes, crisp bacon bits, garlic and grated cheese (prepare the evening prior and put in fridge)
- Heat olive oil in a frying pan on high
- Combine mashed potato mix and egg and fry on medium heat covered for about 5 minutes
- Carefully turn patty over and cook uncovered for another 5 minutes until nicely browned
- Remove patty from frying pan, plate, sprinkle with chives and set aside until the egg is fried (don't worry, it won't get cold)
- Add fried egg to plate, season with pepper and enjoy.
