My experience with the professional cook program at CNC certainly was interesting.
Attending the college opened my eyes to a lot of new ingredients. Being from a small town like I am has its disadvantages when it comes to food.
I had never seen a whole mango before I enrolled in this program -- they were just never delivered to remote towns. Dragon fruit and lemon grass were alien ingredients to me 10 months ago.
Being at CNC definitely was an enlightening experience -- the staff and students are wonderful and I recommend the course to anyone interested in cooking.
I'm sharing a nice, easy and delicious recipe that can be made from ingredients that can be found in stores, no matter where you live.
Raspberry Lush
Ingredients for base:
125 ml graham cracker crumbs
30 ml margarine
30 ml icing sugar
Ingredients for topping/filling
125 ml raspberries (fresh or frozen)
125 ml sugar
1 egg white
125 ml whipping cream
Method
CRUST:
1. lightly grease loaf pan, preheat oven to 350 F
2. melt margarine in microwave
3. combine graham cracker crumbs and icing sugar
4. stir in melted margarine
5. press mixture into bottom of loaf pan
6. bake for 5-10 minutes and cool
Filling
1. beat raspberries, sugar and egg white together in a large bowl and whip until mush
2. whip the whipping cream and fold into raspberry mixture
3. pour into cooled crust
4. cover with plastic wrap and tinfoil and freeze
5. remove from freezer 5-10min before serving
